Is there a way i can remotely watch what is going on with my server?
(people joining, downloading mods, errors etc)

Yes, if you want to make this yourself then you could for example use the socket libary to talk to external applications that may display the data you are looking for somewhere.
Or you look out for ZERO’s beamer bot. He made a discord bot (:
